Before I headed out today I realized that I was hungry, so I had a light snack to tie me over for the next little bit. I munched on half an apple and then I had a handful of almonds for some protein.
By the time I got home I was quite hungry so immediately after removing most of my layers, I put together a late little lunch. I needed something quick and filling so I decided on an over easy egg, some beans (which I squashed in the pan to make them look like refried beans), a slice of manna bread, tomato, and cucumber.
I added a dollop of Dijon mustard and ketchup for dipping, and then I drizzled a sesame dressing over the tomatoes and cucumbers.
It was pretty simple, but satisfying!
