Back In Camera Action

I didn't have class today, so getting myself out of bed became more challenging than normal because "there was nothing I had to do."

But after a few kicks, I made myself get out and on with my day.

Breakfast

I ate my bowl of oats with my roommate Sarah, as she didn't have class until later on today. It's very seldom when all of us are in the house together, so you have to learn to take advantage of every second you do have together.

Today, it was breakfast!

After breakfast, I got ready for the day because I planned on going out to look for a camera.

I packed myself a light snack---a slice of manna bread and peanut butter---just in case I got hungry while I was out! I don't want to buy food when I have food that is going bad in my fridge...

I spent at least two hours at Best Buy experimenting with all of the cameras. I kept on going back and forth between the same ones because I would suddenly forget how the other one operated...

After getting personal opinions from a few different staff members, I finally decided on one. (I like Best Buy because they don't work on commission, so the staff doesn't FORCE a sale on a custmer!)

I got the Canon PowerShot SD1200 IS

I strolled through the mall a little while nibbling on my manna bread and then I headed home because I had to get lunch before I had to meet Laurian at the gym for a kickboxing class.

Lunch

I had a plate of sliced apple, cheese, almonds, and raisins before I gathered my gym gear and went out.

The kickboxing class was a real disappointment. I have never met someone so arrogant in my entire life. I actually couldn't help but laugh throughout the demonstration...which it literally was, as he kept on performing random moves without getting us to do them.

An hour later, and another hour of my life gone to waste, we went to do some cardio...

Half an hour later when we were about to leave, I was informed that I had a hole in my pants...directly on the crack. I felt so embarassed. And to top things off, some random guy was like "Oh don't worry...I am sure no one noticed!"--- EXCUSE ME, YOU NOTICED?!!!

I quickly left...

Dinner

Even though it was 9 pm when I got home to make dinner, I was quite hungry and ready for a good meal.

I decided on baked salmon, steamed spinach and a maple balsamic reduction.

The balsamic reduction would take the longest, so I got that going before I started on anything else.

Balsamic Reduction

1/4 cup balsamic vinegar
1 tbsp. maple syrup

1. Combine ingredients in a sauce pan on medium heat.
2. Let mixture come to a boil.
3. Occasionally stir for about 20 minutes or until the sauce becomes a thick syrupy consistency. Remove from heat, and set aside.


For the salmon, I put a defrosted filet of wild salmon on a sheet of tinfoil. I topped that with fresh garlic, pesto, olive oil, pepper, and dried chillies.

Then I made a tinfoil tent around the salmon and baked it in a 375 degree oven for about 10 minutes.

At the very last minute I steamed my spinach.

When everything was done, I put the serving of spinach down and then placed the filet on top. Then I drizzled the syrup all over the salmon and spinach. For extra flavour, I put a few dollops of fresh tomato sauce on the salmon.
