Everything but the Kitchen Sink

With a promise that had to be kept, Chloaye and I got up bright and early on Boxing Day to whip up a batch of kitchen sink muffins--- the name says it all: everything but the kitchen sink was in these muffins!

Kitchen Sink Muffins
Makes about 16 muffins

1 cup Spelt Flour
1 cup Oats
1 cup Brown Sugar
2 tsp. Baking Powder
2 tsp. Cinnamon

2 tsp. Vanilla
3 eggs
1/8 cup Vegetable Oil
1/8 cup Apple Sauce
1 cup Grated Carrot
1 cup Grated Apple
1/4 cup coconut
1/4 cup raisins
1/4 cup chopped walnuts
1/4 cup chopped dates
1/4 cup chocolate chips

Preheat the oven to 350 degrees.

Combine all of the ingrediants together, except for the eggs (we dont do the whole dry and wet separation thing...that dirties too many bowls!). Make a cave in the centre of all the ingrediants and add the eggs. Wisk together the eggs and then incorporate them into the rest of the mixture.





Spoon the mixture into muffin cups or a greased muffin tin leaving one tin empty---pour some water into the empty tin (this will keep the rest of the muffins good and moist!)



Bake for about 25 to 30 minutes or until an inserted toothpick comes out clean.



They were quite divine if I do say so myself.

Before the muffins were even out of the oven, Chloaye got a call from work. Apparently she was supposed to be there half an hour before that call! So she quickly threw herself together and dad drove her to the pub.

The family came over at around 11 am for muffins and coffee, and to see Chloaye's place!

After breakfast, we decided to hit the town for some serious bargain hunting.

My cousin and I lasted about half an hour in the mall before we decided that it was too crowded and not worth our time...so we ventured up and down the streets, going in and out of second hand clothing stores.

Eventually we got a little tired of shopping, so Mariel and I went into a coffee shop for a little pick-me-up.



After our shopping adventure, we all reunited to go back to Chloaye's for some lunch.

I had some left over tofurkey and salad. I love left-overs!!

In the later part of the afternoon we went back to Mer's to meet with the rest of the family. We spent a couple of hours there and then all of the kids went out to a restaurant for some drinks and more chatting.



We love each other....

After we left that restaurant, we went to a friend's place who I hadn't seen in almost 3 years. It was so good to see him!

Boxing day flew by...I can't believe Christmas has come and gone.
