A Good Scrub Down

I tried to wake up bright and early today so that I could get a whole lot done before my evening class...but that didn't happen! I ended up waking up at around 10 am.

For breakfast today I had oats with blueberries stewed in to the mix; it was definately not as good as the ol' banana mix, but I was still out--- I may be in need of a grocery shopping trip sooner or later...

In fact, I was even low on toppings...so on the blue oats I put raisins, apple sauce, AB, and some Original All-Bran for the added crunch.


I also had a cup of coffee to give me a boost of energy so that I could get something done today!


After breakfast I got a sudden urge to clean...and when I started perusing the house, I noticed that my fridge was in dire need of a good clean job! I emptied her out and gave her a gooood scrub down...parts of her even got a bath.

When I was finished with the fridge, I moved on to the freezer...and then the floors, and then the carpets, and then the washrooms. I put a solid 3 hours in to cleaning...but boy, am I ever glad I did!

By the time I was finished I noticed that class was creeping up on me and thus, I took a shower and had some lunch.

For lunch I had a rice cake with some cheese and tomato and some tuna with lemon on the side.


After that little eat, I scurried out the door to class...Apparently Phil the groundhog didn't see his shadow today which only means 6 more weeks of winter...so of COURSE, it was snowing!

We learned all the ins and outs of Twitter today...God, am I ever glad I pay for that!!

During class I snacked on an apple to keep me sane and alert for what was to come...Not much. Mind you, even though the class is 4 hours and in the evening, it goes by quite quickly!

My girlfriend's mom drove me home after class which was soo nice...I didn't have to fight the snow!

For dinner tonight, I baked a sweet potato in olive oil, oregano, salt, and dried hot chili flakes at 425 degrees.


I also stirfried some onion, garlic, peas, and soy slices.

At the last minute I decided to whip up a miso gravy for the sweet potato.

Ingredients

1 tbsp. spelt flour
1/2 cup water
1 1/2 tsp. miso paste
1 tsp. Dijon mustard
1/2 tsp. oil

1. Put the flour in a sauce pan on low heat and slowly add the water while whisking. Do this until it forms a paste and comes to a slight boil.

2. Add the miso, Dijon, and oil...Stir well and let boil a little bit longer until desired thickness is achieved!

3. Serve hot, baby.

I drizzled the gravy onto the sweet potatoes...


This was actually quite a fine dish if I do say so myself...comfort food at its best.

To satisfy my sweet tooth, I had some trail mix: chocolate chips, nuts, raisins, and bran flakes.

Well, I am going to finish off some reading and then go to bed.
