A Simple Snack


Ever since I discovered this incredible snack idea on KERF (Kate Eats Real Food...she is amazing!) I have been DYING to try them out. So today at the grocery store, I made a point to pick up a bushel of kale...and let me tell you, it was most definately a bushel!! It looks like I have a tree growing in my refridgerater right now...but moving along.

Now, you're probably wondering what sort of "marvelous snack" one can make out of kale. Well, it's quite simple: kale chips.

Ingrediants
a few sprigs of kale (or more if it's for a bigger portion!)
2 tsp. olive oil
salt & pepper (or any other seasonings you may like)

Preheat the oven to 425 degrees. After rinsing and drying off the kale, rip it up into bite size pieces (mine were quite large as my bites tend to be bigger than normal) and lay them out on a baking pan!


Drizzle olive oil over the pieces and then giver a toss to make sure they all get nicely coated (I didn't follow my own instructions and went a little crazy here with the amount of olive oil...I learned that if you put too much, it takes way longer for the kale to become crisps!) Then sprinkle as much or as little salt and pepper as you would like!



Put in the oven for about 15 minutes...but watch carefully at the end, as they really start to crisp up quickly!

And, enjoy! These are actually incredible, and good for you! So go nuts.
