So today was my first day off, but it was no time to laze around. I woke up at around 830 so that I could get a head start on the day.
For breakfast I had an oatmeal pancake with plain yogurt, flax meal, apples, and bananas. For some extra pazaazz, I spread on some PB!
When I got home I had a quick shower and lunch.
For lunch I had a simple sangy --- complete with cheese, tomato, cukes, pickles, red onion, lettuce, Dijon, MAyyoo (I don't know what has gotten in to me...I used to hate mayo with a passion and yet I am just lovin' it lately. Can't be a good thing,) and Sriracha.
I had to trek down to work to pick up my lost T4 in between house viewings as apparently I need to do my taxes before the end of the month...I love leaving things to the last minute --- Hence me still not having a place to live.
I looked at another place in China Town tonight which was UBER cute and artsy...but it needed some serious TLC as some things were really showing rust. If I was flighty enough I would have signed the lease, but I saw too many potential problems...One being, INFESTATIONS.
There were over 20 people applying for the place anyways, and I didn't have my roommates with me to sign anything...Super helpful.
I finally got home at around 830 tonight after waiting for the street car for seriously half an hour...Let's just say I was plenty hungry when I stepped through the door. Good thing I thought ahead and picked up some key ingredients on the way home for dinner.
For dinner tonight I had a "caesar" salad, a salmon filet, and a dinner roll.
Oh my gosh. It was incredible.
The caesar salad dressing was a take from the Refresh cookbook.
Caesar Dressing
1 1/2 tbsp. capers (I had to use pickles as capers were not in my household)
2 cloves garlic, minced
2 tbsp. lemon juice
3/4 cup chopped tofu
2 1/2 tsp. Dijon mustard
1 tbsp. apple cider vinegar
1/2 tsp. salt
3/4 tsp. pepper
1/4 cup water
1/2 cup olive oil
1. Combine all of the ingredients in a blender and puree until tofu is smooth.
I chopped some romaine lettuce and put it in a tupperware with some dressing --- I then proceeded to shake'r (the best way to toss a salad as each leaf gets evenly coated!)
For the salmon, I marinated a filet in some white wine and then sprinkled an array of herbs (literally anything I had in the cupboard.) For an extra kick, I lay on some slivered garlic.
I baked the salmon in a 375 degree pre heated oven for about 12 minutes.
Wow. Everything turned out incredible. The salmon was perfectly cooked as it basically melted in my mouth...and the caesar dressing was flowin' with garlic.
